What goes wrong

The Tower shift starts badly before anyone touches a pan

Kitchens in Tower rarely leave a supplier over price. They leave after a run of weeks where the whites came back grey, the sizes were wrong, or the van arrived mid-prep.

  • Whites that are not actually white

Grease and protein need their own wash. Run through a front-of-house cycle they build up, and a Tower brigade ends up in jackets that look tired in a month.

  • Sizes that turn into a scramble

Nobody should be hunting for their size at the start of service. Sized and named means the rail is ready and nobody is rummaging.

  • Deliveries that land mid-prep

A drop timed for the middle of prep is a drop nobody in Tower can receive. The round has to be planned around service, not around the traffic.

How it works

Getting a Tower kitchen onto the round

Most of the work happens before the first collection. Get the sizing and the timing right and the service stops being something the pass has to think about.

Serving EC3N Since 2009
  1. The count

Every section sized in person. Sizing is where most kitchen accounts go wrong, and it is not something a form gets right.

    An hour, on site

  2. The round

The van is already in EC3N. Joining that round is what keeps a small brigade priced as a stop rather than a journey.

    EC3N · 7 days

  3. The switch

You are never between suppliers, and no service is covered in borrowed jackets.

    No gap in service

  4. The account

A named account manager who knows your kitchen and the EC3N round — sizing changes and new starters go through one person, not a form.

    One name, not a queue

Running more than one kitchen around City of London? The same account manager covers all of them, on staggered days so no site is left short.

How it is processed

Your Tower whites, washed by us and nobody else

There are two buildings between your linen and ours, and we own both. Tower collections run 9.6 miles to our Wembley plant. Nothing is passed to a third party in between.

Grease lifts at a different temperature from protein, and scorch responds to neither. Kitchen garments are classified for that rather than run on a general cycle.

Switching supplier in Tower without a shift in mixed whites

The reason Tower head chefs put up with a supplier they have stopped rating is timing: there is no good week to gamble. That is a scheduling problem, not a reason to stay.

  1. Before you commit

    We size the brigade properly

We size the Tower brigade in person rather than take a headcount off an invoice — the invoice tells us what you were sold, not what fits.

  2. The handover

Whites land before the old supplier stops

The two contracts overlap on purpose, so no Tower section starts a shift on borrowed jackets.

  3. After

New starters go on the account the same week

Brigades change constantly. The account is set up so a new starter is a phone call, not a reorder.

Nothing here needs you to be out of contract first — the count and the quote cost nothing.

Local knowledge

Tower, specifically

An energetic part of Tower featuring a mix of historic architecture and modern living. Unique to Tower.

Kitchens here sit on the EC3N round, and the window that matters is prep rather than service — Tower is close enough that a disrupted run is a second trip that day.

Tower kitchen laundry — the questions we get most

Do you collect in Tower?

Yes — Tower sits on the EC3N round, 7 days, 9.6 miles from our Wembley plant.

  • Shared with Aldgate, Billingsgate and Lime Street — adding you changes the schedule, not the route.
  • The driver knows the service entrances around Mansion House, Bank and Monument — route knowledge is most of what separates a kept window from a missed one.
  • A missed window here is picked up on the next round rather than the next week, which is what 9.6 miles buys you.
  • 454 kitchens around EC3N are already on this round — so the vehicle is sized for kitchen work rather than adapted to it.
Will the drop land in the middle of prep?

Yes — the EC3N round is sequenced around service patterns.

  • The time is agreed when the account opens — against your service pattern, not ours.
  • Timed around Mansion House so the van is not arriving into the worst of it.
  • If a drop is missed, a missed window here is picked up on the next round rather than the next week.
  • A relief driver inherits the window with the route — so cover weeks do not become the weeks it goes wrong.
What is the commitment for an Tower account?

No long-term tie-in and no exit fee.

  • Terms flex with seasonal demand — Tower in August and Tower in January are different kitchens, and the account should say so.
  • Nothing needs you to be out of your current contract first — there is no cost to finding out.
  • Stock arrives before the old supplier is stood down — you are never between suppliers.
  • If it is not working, say so — most problems are a wrong par count or a wrong delivery window, and both are fixable without changing supplier.
What is the difference between hire and wash-only in EC3N?

Both, and mixed accounts are normal. One collection covers whichever way each line is set up.

  • Hire — stock, replacement and sizing are ours; you never place an order.
  • Wash-only — garment for garment, never substituted.
  • Plenty of kitchens do both — hired cloths and aprons, own-branded jackets on wash-only.
  • You can move a line between the two later — kitchens often start on hire and move their jackets across once the branding is settled.
What stops grease transferring between loads?

Yes — kitchen soil is classified separately from front of house.

  • Grease, protein and scorch need their own wash — and their own temperature.
  • Whites never run through the cycle the table linen was on — which is the usual reason jackets go grey.
  • Colour-coded cloths stay in their own classification — which matters on any site that needs an audit trail.
  • Every load is temperature logged — and the log is against your account, not a general plant figure.
What does a kitchen account cost in Tower?

It is quoted, not tariffed. The number depends on sections and turnover, not on floor area.

  • We count a real week in Tower before quoting — the invoice tells us what you were sold, not what you used.
  • No minimum order — so a small kitchen is a normal account.
  • The count includes your busy season — which is where most estimates fall over; a figure taken in February will not survive August.
  • The count and the quote cost nothing — we will count your week while you are still under someone else.
Is catering different from restaurant work?

Yes. Contract catering, schools and care homes are all on the rounds.

  • School and care home kitchens run on the same rounds — as the restaurant trade.
  • 1 care home kitchens nearby — where consistency matters more than turnaround speed, and the account is set up for that.
  • Colour-coded cloths and named whites — which is what an inspection actually looks for.
  • Contract caterers running several sites — get one account manager and staggered collection days across the group.
What happens when the Tower brigade changes?

In person, section by section — not off a headcount.

  • Every section is sized at setup — larder and pastry do not wear through jackets at the same rate, and the count reflects that.
  • A new commis goes on the account the same week — rather than waiting for an order cycle.
  • Garments are named — the rail is ready and nobody is hunting for their size.
  • Par counts are re-set after the first month — and again after your first busy season, which is where opening figures usually fail.

The cheapest wash for Tower is the second one you avoid

Most of the environmental cost of kitchen linen is rewashing and replacing it. Classifying kitchen soil properly the first time does more than any claim on a van.

  • The EC3N round is a shared journey rather than a separate trip to Tower.
  • Whites washed on the right classification last longer before replacement.
  • A scorched cuff is repaired and put back into rotation, not written off.
  • Over four fifths of our central London vehicles are electric.
